Tomato Rice with coconut milk

Ingredients

  • 3 cups Basmati rice/regular rice

  • 2 tbsp oil

  • 1 tbsp ghee

  • 2 medium onions

  • 3 chilies

  • A handful of coriander leaves

  • A handful of mint leaves

  • 3 cups of coconut milk

  • 3 cups of water

  • 1 cup cubes of carrot

  • 1/2 cup green peas

  • 2 cups of cauliflower florets

  • 1 cup of beans cut into 1-inch lengthwise

  • 1 potato diced

  • 1/2 capsicum diced

  • 4 medium-sized tomatoes sliced

  • 3 cinnamon( 1 inch each)

  • 3 cardamom

  • 5 cloves

  • 1 bay leaves

  • 1-star anise

  • 1 tbsp ginger paste

  • 1 tbsp garlic paste

  • 1 tsp garam masala

  • 1tbsp chilly powder

  • 1/2 tsp turmeric powder

  • salt to taste

Steps to make it

  1. Heat oil and ghee in a vessel and add cinnamon, cardamom, star anise, bay leaf, cloves.

  2. Add sliced onions, slit green chilies and cook till onions are brown.

  3. Add ginger and garlic paste and half of mint and coriander leaves and cook for 2 minutes.

  4. Add carrots, beans, cauliflower, green peas, potato and mix well.

  5. Add tomatoes and cook for 3 minutes.

  6. Add salt, chilly powder, and turmeric powder and mix well for 2 mins.

  7. Now add capsicum and garam masala powder and cook for 2 minutes.

  8. Then add 3 cups coconut milk and 3 cups of water and let it boil.

  9. Finally, add rice and close the lid until the rice is cooked.
